The Palomar’s founder and executive chef Yossi Elad is running seven restaurants including the renowned Machneyuda in Jerusalem as well as eateries in Frankfurt (Bar Shuka), Paris and Berlin.
His kitchen mixes and fuses the food traditions and influences from Palestine, Lebanon, Syria and the Mediterranean region. According to him, cooking is like art - artists like to put their mark and own twist in their dishes, reflecting powerfully his guiding principle „I am cooking for the people I love.“

Serban Mihai Pavel is the chef and co-owner of restaurant Bodil in the hip Vesterbro neighbourhood of Copenhagen.
When he‘s not leading his team in the kitchen, you can find him
on the floor discussing food and wine with our diners, and loves hearing their stories. He‘s a perfectionist by nature and his eye for detail is what puts the soul in our restaurant and sets the standard for the team.

Anirudh Arora
Born and raised in Delhi, Ani was headhunted by the famous Oberoi Hotel right after graduating from the Institute of Hotel Management Lucknow, and went on to open a number of chains for the hotel empire, before being appointed as the personal chef of Indian Prime Minister Mr Atal Bihari Vajpaito. Looking for new challenges, Ani travelled to London in 2003 where he worked in a Michelin-starred Mayfair restaurant and then opened the critically acclaimed restaurant Moti Mahal. Ani has since successfully gone on to launch the Hankies brand in 2017 with Hankies Café in Shaftesbury Avenue, followed by Hankies Marble Arch a year on. Ani is a fond researcher of Indian’s ancient culinary tradition and has devoted his career to gathering the longforgotten recipes of rural India into his book, Food of the Grand Trunk Road, written with Hardeep Singh Kohli.
